Carrots with tarragon and honey

These turn out exactly like the French Laundry caramelized fennel.

Cut the carrots lengthwise into 2″ slices.

Cook covered with 2 tbsp butter, salt, and pepper for 10 minutes in a medium nonstick skillet over medium (6/9) heat. Stir occasionally.

Add honey and fresh tarragon. Recover and cook for 5-10 more minutes, stirring occasionally, until caramelized. Uncover at end to let moisture evaporate.
